Back in 2009, we started to conduct interviews with chefs and other folks in the South Jersey food and beverage industry. Our very first interview was with Chef Mark Smith of The Tortilla Press in Collingswood. Though we were relatively new food writers, he was friendly and very generous with his time. We still love Chef Mark and his food, so I am thrilled to be able to interview him again, this time for Jersey Bites.
